We were exhausted last night after slaving on the farm all day, no imagination, no one really wanted to cook... but hungry. Suddenly we remembered this curious and definitely a bastard invention - pressure cooker pasta. Of course it was easy, but it was also very tasty and the ideal comfort food. Remember, any of the veggies can be replaced - beans for carrots, bajji chilli for a single green chilli, toss in corn, broccoli whatever is handy. I just happened to have this combo in the fridge.
Here goes: Chop tomatoes into quarters, top and tail a handful of beans and cut them into longish pieces, chop 6 bajji chillies, a few florets of cauliflower, mince a little garlic and a little fresh coriander. Put all this into a pressure cooker with a packet of penne or fusilli. Add dry herbs, crushed red chillis, salt. Add 4 cups of water, 2 tablespoons of Amul butter, a few chunks of Amul cheese.
